Answer: “The ability to go in there and start. I am the least impressive cook you will ever see. I am completely without knife skills, I screw things up all the time. When I’m in the kitchen I’m not obsessively trying to create the perfect dish; I’m trying to put dinner on the table. Comparing yourself to the people who cook on television is like comparing yourself to Andre Agassi. If you can drive you can cook.”

my old man was a resort hotel owner/executive chef way back in the day and has given me several of these guys’ cookbooks. i gotta say that they’re great for exquisite every-day meals.
just search for any ingredient and you’ll find a bunch of killer things to make with it.
now, it’s not like world-stoppingly amazing, but it’s really good food and really easy/cheap to make and they DO curate a couple show-stoppers in every category. they’re my favorite one-stop-shop for ideas for just about anything.
